Phil, a 244 cam. that should give about 140/150bhp, now you say that you have an invoice from a engine specialist if on that invoice is stated foged pistons than you can go to 7000rpm without any problem ( mine is 7200 wit forget pistons on a tuftrided cranck ) the double chain drive for the cam would sugest that at one point the engine had more horsepower than it has now or it just could be a case of overkill.
R U sure you don't have a fuell pump and a metal fuell filter rather than 2 fuel pumps.
the problem might be in the fact that your carbs are a bit small for this cam hence the need for a big ventury.
If your dizzy would turn a few milimiters you would had more than just a hesitation at 5500 also rough runnig trough the whole range.
